There is something about this time of year that just screams comfort, you want to be all warm and cozy under blankets however there is one thing that is a must for me.
Comfort food!!
Now at the time I’m posting this I’ve been calorie counting for almost 2 months now so I truly treasure my comfort foods when I have them and comfort doesn’t always need to be junk either, comfort food is usually something that heals your soul, makes you feel better after a rubbish day at work or simply reminds you of family.
One of my main go to is mash potatoes, the humble potato is by far my favorite vegetable, lots of things can be made out of it but mine is mash, buttery smooth mash that soaks up any gravy you eat with it, when I make my stew I have it with mash and it creates such a comfort for me, I know it isn’t everyone’s favorite but I’m a sucker for it. If I see mash on the menu in replacement of a different veg I will often ask for it.

Fajitas is another one, it’s simple and surprisingly low calorie (for the counting) and there is always lots of left overs for the freezer for future lunches for me when I finish early at work or do not have my children to cook for, I use a premade mix from Old El Paso and I use the Smokey bbq mix but I also add in my own spices to the mix to make my my own. My children also ask for this for dinners, it’s comforting and filling as well.
There’s one meal that Neil makes that I adore so much, we discovered it online, probably from TikTok I can’t remember now, but it’s Peach chicken, a sweet and slightly spicy chicken dish served with rice and I cannot get enough of it! Like the fajitas sometimes there is left overs which I will freeze up for a lunch but honestly it’s so yummy there isn’t much left over ha!

One final thing that I adore is noodles, there is a local Chinese takeaway place near where I live and they just happens to have the best noodles around, obviously I have talked about this other place called Mui and Coco which also has lovely food and their gyozas are a comfort food of mine, there is something about the beef fried noodles in this place that just call to me, with some chicken balls and sweet and sour sauce I just love this after a long day or evening out to the pub.
Comfort food is truly a personal thing, we all have something that we crave and need when things are bad, and as I’ve said despite the fact I have been counting those calories I will not deny myself my comfort when I am in need of it.
