Planning and making dinners can sometimes be a bit of a struggle, coming up with fun and new things that aren’t going to take up too much time, Often I go online and search on pinterest for meal ideas and even found some yummy things on tiktok which I then share to Neil and some have become regular meals that we have again and again.
One of these is a dish called Jalapeno Peach chicken which I believe I found on I Am Homesteader who has lots of interesting and wholesome meals to cook and try, however Peach chicken just called to me as it sounded so delicious and I can safely say that it is.
We tweaked the recipe a little bit, as I am not a huge fan of jalapenos and Neil created his own spice blend with something that I can handle, however the mix of something sweet and then something spicy is just a delightful thing to eat and of course we also used tinned peaches purely out of laziness and the fact that our peaches in the uk aren’t really the best, more so out of season however that doesn’t mean that tinned fruit isn’t a bad thing!
The one and only peach jam that we’ve been able to find within the UK has been the pricy but delicious Bonne Maman Peach Preserve which also tastes amazing on your morning toasts, it unfortunately isn’t the cheapest of brands to buy however as I said we couldn’t find anything else in the supermarket other than apricot.
What I had planned for this little series of posts is to share and show you that meals you find online or from TikTok that they aren’t all terrible, in fact we have found and cooked many meals from online recipes but of course like everything there has been a few failures, Tiktok tends to have more recipes that fail due to the fact that its put into short form media but thats where everything is going to these days.
With blogs and recipes that are found online it gives a feeling of when you try out a recipe in a book, someone has taken the time to trial and error them before posting and the images are usually more true to life.
We serve our Jalapeno Peach Chicken with some rice, lazy rice of course as not everyone has time to wash, re wash and then cook up some rice, we often go for Veetee purely because of the portion size however you can always use whatever rice you like, we just find Veetee is a lot easier to count as the little pots are weighed out perfectly.
Peach chicken is by far my favourite of the meals we’ve found and I look forward to it every single time its suggested.
